I love the flavorful chicken filling in these. So many times enchiladas are swimming in sauce and its hard to figure out what is inside. My husband always orders Pollo Enchiladas Verdes (green chicken enchiladas) when we eat at a Mexican restaurant! (I am the fajita eater in our family but I don't have your husband's excellent memory!) It will be fun to surprise him with these enchiladas made at home!

I am a sucker for Mexican food, it is so comforting and tasty. But I rarely cook it at home and that's a shame.
